A premium plum sake made after the umeshu boom a few years ago, this umeshu is the product of a long period of trial and error. Using their own sake as the base alcohol and ripe Nanko plums from Gunma prefecture, the brewers also experimented with the type of sugar and steeping methods to create their ideal drink. It has a rich flavor reminiscent of honey, with notes of apricot and shiso on the nose. It's sweet and textured, but also balanced with acidity from the plums and the umami in the background from the sake. It's suitable for a digestif or paired with a cheese platter. It's best served on the rocks or topped up with soda water. Store in a dry and cool place, avoiding direct sunlight.
