70cl / 53.4% / Signatory - This wonderful 32-year-old Highland Park was drawn from a first-fill sherry butt and bottled for Signatory’s 35th birthday. There are abundant fruit notes of dried fig, cranberries and marmalade that cushion the impact of the sooty peat and add a subtle bounce of sweetness.
