Domaine Servin Chablis Premier Cru Montee de Tonnerre 2023

Drink it now or cellar for up to 10-15 years. No need to decant but best to open it half an hour before service. Located in the northwest of Burgundy, Domaine Servin is one of the most prestigious in the Chablis area, with a long family tradition that dates back to the second half of the 17th century. The estate, which today extends over approximately 35 hectares of vineyards, distributed in all the main appellations, can produce a wide variety of different wines based on the various microclimates and peculiarities of the soil. The Chardonnay grapes come from the Premier Cru Montée de Tonnerre on the right bank of the Serein River. Here, the vineyards have an average age of 39 years and are planted on Kimmeridgian soils composed of calcareous and clayey marl which give the wine intense mineral and fruity aromas. The wine has a brilliant color with straw yellow tones and golden reflections. Its aromatic profile is intense and broad with notes of white flowers, citrus fruits, and white fruits. On the palate, it is rich and intense with a well-balanced freshness and a good concentration of fruity flavors. The finish is elegant and long with a pleasant mineral vein. Excellent with red mullet, seafood, or salmon in hollandaise sauce.
