Located in the heart of South Australia's Barossa Valley, Penfolds is one of the country's most renowned wineries and has a history dating back over a century. Founded by Christopher Rawson Penfold, the company achieved great success with the production of the iconic Grange wine, created by the winemaker of the time Max Schubert. Throughout history, other winemakers have played a fundamental role in this famous winery: in the 70s Don Ditter, then John Duval, and finally Peter Gago, who has been responsible for production since 2002. Bin 311, whose first harvest was in 2017, is produced with grapes from vineyards located in cool climate areas such as Tasmania, Tumbarumba and the Adelaide Hills, where Chardonnay develops the qualities most suited to this style of wine, characterized by an intensely fruity character, and enriched by barrel fermentation and a 10-month period of aging in French oak barrels. The wine has a straw yellow color and an aromatic profile that reveals notes of citrus and stone fruit, grapefruit, and white flowers. On the palate, the wine is fresh, clean, and linear with an invigorating acidity and a strong mineral streak. It is juicy and concentrated with a good structure and a long and delicately creamy finish. Excellent with crab and lobster.
