Our packs usually contain 4 mackerel fillets as most people will want two fillets per serving. We tend to fillet fresh mackerel from either Scotland or Cornwall.  Mackerel is a highly versatile fish. We think it's great when marinated and grilled to be used in salads, smoked, cured or even eaten raw as sashimi or sushi. The high oil content gives the mackerel a beautiful taste when eaten raw. We don't pin bone mackerel fillets so be a little careful when eating them. The pin bones run horizontally along the centre of the fillet.
